Meet Louis
Millers since 1704
Bonjour! I’m Louis, an 11th-generation miller in the oldest family-run wheat mill in Luxembourg.
Come with me as I travel all around the world and share the iconic recipes I discover during my trips.
Here are some of my favorite countries I visited and my discoveries:
France
Looking for a genuine French crêpe, I headed to The City of Light: Paris!
Between climbing the Eiffel Tower and walking through many beautiful gardens, I built up an appetite and followed my nose to the closest crêpe stand.
All I can say is wow! Now I understand why there’s an entire holiday dedicated to crêpes in France. The Day of the Crêpes (or “La Chandeleur”) is a time that families gather to enjoy these paper-thin delicacies.
Whether savory or sweet fillings, these crêpes are magnifique!
Belgium
My quest to sample the world's most famous pastries led me to Liège, Belgium, home to one of life's most delightful indulgences – authentic Liege waffles.
Faster than I could say Bonjour to the cheery street vendor, I had a steaming, buttery, vanilla-laden joy for the senses in hand.
PSST: The secret ingredient to this exquisite dish is the healthy dose of solid pearl sugar in the batter, which melts and caramelizes when cooked.
Tempting as it may be, don’t eat the batter! The sugar can be hard on the teeth when not cooked. I learned this the hard way…
Canada
When I set off to explore the «Land of Maple Leaf» I was instantly impressed by its expansive landscapes, spectacular wildlife, and friendly people.
My favorite discovery was the sweet nectar of Canada’s liquid gold, maple syrup. It’s the perfect complement to a fluffy pancake.
And did you know that the Canadian province of Quebec produces 80% of the world’s syrup? On behalf of pancakes worldwide, we are eternally grateful.
